Valle de Uco is a fertile plain 80km soutwest of Mendoza city. Nestled between the low Pre-Cordillera and the towering blunted peaks of the Cordon del Plata, it is a high altitude zone prducing excellent grapes, pears and peaches. It also produces a wily, intelligent querulous trout. The valley is particularly stunning at daybreak when the snow-capped peaks reflect the bright orange and pink of the rising sun. Bathed in such chocolate box glory is Estancia San Pablo, a 43,000 hectare working ranch that ripples along the Andean foothills the whole way to Chile. Three thousand rust-colored cattle dot the hills, watched by monogamous condors and shy guanacos.
The estancia is owned by Walter Sibila, winemaker and expert fisherman, who has lived there with his family for two generations. Walter spent years studying wine making in Bordeaux before returning home to the farm to raise his young family.Together with his wife Carina, they will prepare home cooked meals with all produce either grown or raised on their farm, from prime beef, chicken and eggs to organic cherries, peaches and an array of vegetables.
The main draw here is the crystal clear Rio San Pablo, a fast moving stream that gushes over brown stones and through a long green sliver of valley. The river is jumping with trout - wild fighting rainbow which are small, super quick and hard to catch. They frustrate even the most experienced fishermen. Walter will give you a crash course in fishing the river San Pablo. Here the trout are no fools and must be approached in a completely different manner with a different fly and technique. They also require effort and speed.
A ONE DAY EXCURSION TO THE ESTANCIA
You will be collected at 8.00am in
Mendoza after which we will drive south for two hours until we reach
Tupungato
in the beautiful Valle de Uco. Here you will experience the "rustic
deluxe" ranch Estancia San Pablo nestled at the foothills of the
Andes at an elevation of 2000m
above sea level. You will be welcomed by Walter and Carina will cook
you a hearty breakfast of scrambled eggs, toast and coffee before you
set off for an exhilarating day fishing.
The
day will be spent fly fishing in nearby mountain steams. You can follow
the stream on horseback if you wish, accompanied by Walter Sibila and
your wine host who both know the best fly fishing spots. Lunch is a
riverside spectacular of fat trout, cooked in white wine sauce,
accompanied by fresh salad, the finest meat and excellent wines. By
early evening the river reveals itself as teeming with rainbow trout.
When the sun sets you will return to the estancia around 7pm. Wehave a supper of homemade empanadas and coffee and return to Mendoza at 10pm.

DAY 2
The next morning you will have breakfast at approx 8.30am and head off around 9am either on horseback or in the pick-up truck. You will spend a relaxing day fly fishing in one of the many mountain streams. Lunch again will be an asado of freshly caught trout and another opportunity to try an excellent Argentine wine. After returning to the estancia at around 7pm you will be welcomed with a light supper of homemade empanadas, fresh bread and coffee.
You will leave at approx 8pm and arrive back in
Mendoza at around 10pm.
